It was my day for morning tea today.
I had the kids over the weekend so they had consumed everything pre-made or even remotely edible in the house so I had to think quick. Something I always have in the freezer is puff pastry sheets, my son and daughter used to be mad on pizza pinwheels when they were little and every class party they were a given (I’ll put the recipe at the bottom as it is an easy and tasty lunch box filler). I haven’t had either of them at home for any length of time in about 2 years but old habits die hard.
I decided to try something different and sweet with my pastry today and knocked together some cinnamon scrolls in 30mins flat. Got to love speed cooking! Any pastries, sweet, sugary and moreish that you can produce in under ½ hour are both a blessing and a curse all in one.
3 sheets ready rolled puff pastry
2 heaped tbsp ground cinnamon (more or less to taste)
75g soft light brown sugar
Icing sugar for icing if desired (who doesn’t desire icing?)
Heat the oven to 200c and grease a baking sheet
Make sure the butter is really soft, put it in the microwave for 10 seconds if necessary.
Simply mix the sugar and cinnamon into the soft butter until smooth and mixed and uniform in colour.
Spread the cinnamon butter over the pastry right to the edges using up all of the butter.
Roll up the pastry like a Swiss roll, not too tight as the pastry will expand when baking.
Slice each pastry sheet into 6 pieces using a sharp knife and lay on the baking sheet with a good few centimeters between each.
Bake for 18-20 minutes until crisp and golden.
Make a icing drizzle with icing sugar and water added by the teaspoonful until the desired consistency is reached.
Drizzle over the warm pastries.
Eat warm or at room temperature. Will keep in a tin for 3-4 days (Please, they sat on the bench for about 10 mins and the 3 of us ate them all!).
You have to try the pinwheels though. They are savoury morsels of pizzary goodness! Kids adore them.
1 sheet puff pastry, thawed
1 Tbls cream cheese
2 Tbls pizza sauce
1 Tbls grated parmesan
2 Tbls bacon bits
1 egg for glazing
Preheat oven to 210C.
Spread cream cheese over pastry, the pizza sauce,
parmesan and bacon.
Roll loosely. Cut into 1 cm slices. Glaze with egg.
Place on a lined baking tray.
Cook for 15 mins.
