Here is something I whipped up earlier in the week but just haven’t had the chance to share yet.
It was mildly spicy, the sausage was a real treat when eaten with a piece of baked potato, I could have almost skipped the chicken entirely and just eaten the potatoes and sausage. It says it serves 2 but it left us a breast and a half of leftover chicken and probably should have left some potatoes too but portion control isn’t really my thing. I have plenty of will power, it is my won’t power that leaves much to be desired.
Baked Chicken with Potato and Chorizo
1 x #14 chicken, cleaned
3 large potatoes, chopped into even sized roasting pieces
1 chorizo sausage (about 100 g), sliced
1 tablespoon dried chopped chives
½ teaspoon hot chilli paste
¼ teaspoon cayenne pepper
1 teaspoon salt
2 large cloves garlic, peeled and finely diced
100-150 mL light olive oil
Pre-heat oven to 220°C.
Place the chicken in a large Pyrex dish and surround it with potato and chorizo.
Mix all other ingredients in a small jug and pour over the dish contents.
Cover with foil and bake for 30 minutes.
Turn potatoes and chorizo, and baste chicken with the oil and spices.
Cover with foil again and return to the oven for another 30 minutes.
Remove foil, turn again and turn the chicken over. Baste again.
Return to the oven for a final 30 minutes.
