This was something I made, just because. Because, I had some evaporated milk in the fridge that would have gone to waste otherwise. What better to do with left over things than to transform them into exotic desserts! You could try this with any kind of jam that amused you, strawberry, ginger, indeed whatever your current taste of the week is. I found this recipe easy to make and was as surprised as anyone when they actually came out of the moulds! I had steeled myself to eating them out with a spoon but *wha-lah* out they came and I was a genius!
Apricot Panna Cotta
Makes 6 servings
1 Tbls powdered unflavoured gelatin
¼ cup cold water
1½ cups Evaporated Milk
¾ cup Apricot Jam
½ cup plain yogurt
1 tsp vanilla extract
2 cups frozen mixed berries
½ cup Apricot Jam
2 tbsp water
Combine gelatin and water in a small bowl. Let stand 10 minutes. Place evaporated milk and jam in a medium saucepan.
Cook over medium heat until mixture just comes to a boil. Remove from heat.
Stir in reserved gelatin. Mix until well combined. Add yogurt and vanilla, stirring to combine.
Pour ½ cup mixture into 6 small dessert bowls.
Refrigerate until set; about 2-4 hours. To serve, run a knife around the sides and turn upside down onto serving dish.
Place berries, jam and water in a saucepan. Bring to a boil. Lower heat and simmer 10 minutes.
Refrigerate until cool or ready to serve over the panna cotta.
By the way, my daughter is very partial to this sauce, particularly on vanilla ice-cream. This is definitely a keeper!
