Violet Crumble Cheesecake

Violet Crumble is a honeycomb covered in chocolate candy bar. Just in case this fabulous, amazing and delectable morsel is not available in your area, if it isn’t then I pity you. As you can tell, I am a little partial to them. The violet, as far as I can tell, just refers to the purple packaging.

Violet Crumble Cheesecake

1 x 250 g packet Nice biscuits (sugar covered plain biscuits, just use whatever base biscuits you like)
1/3 cup melted butter
2 x 250 g packets cream cheese
½ cup caster sugar
1 x 50 g Violet Crumble bar, crushed
½ cup thickened cream (I had to add a little extra cream to make the mix manageable)

Mix biscuits crumbs and butter in blender, and then press into a 20 cm springform tin
and refrigerate.
Beat cream cheese with an electric mixer for 2 minutes or until smooth. Add sugar and
cream and mix.
Fold crushed Violet Crumble into mixture, spread into crust and refrigerate until set.
