BBQ pork ribs with ginger

I am always on the lookout for the perfect rib recipe. This one was enjoyable and I’d definitely recommend trying it. I teamed it up with an easy tomato and cucumber salad and some potatoes to make it a full meal. Even my daughter, who abhors ‘sweet’ meat, nibbled a few of these down to the bone so they can’t be too bad.

Smokey Barbecue Pork Ribs with Ginger

3 racks pork ribs, about 1 ½ kg
¼ cup brown sugar
½ cup barbecue sauce
1 tablespoon Tomato Paste
2 tablespoons dark soy sauce
1 tablespoon grated fresh ginger
2 tablespoons peanut or olive oil

Cut each rack into 4-5 pieces. In a shallow dish combine the sugar, barbecue sauce, tomato paste, soy sauce, ginger and oil. Add the ribs and turn several times to evenly coat with the marinade. Cover and refrigerate for 1-2 hours.
Heat the oven to 220C. Turn and baste in the oven every 15 minutes, cooking for about 50 minutes until done.
