Bear with me here, those in the know; I live in Australia, hardly the tortilla capital of the world. These things are new to me, most especially the idea of what to do with left overs. I went on an internet search and found a wonderful new ‘use up the leftovers’ dish, the Quesadilla.
I had 3 tortillas left over from my tortilla cooking and eating episode over the weekend and a very growly belly. It goes without saying that the husband was hungry too so after my quick internet search, despairing of the fact that I had no ‘ready to hand’ ingredients I raided the fridge and made do with what we had.
I found some ham, an almost empty jar of roasted capsicum and of course cheese. After grating all the cheese (there was only an end left) and dicing the capsicum and ham finely I placed my still pliable (thank goodness I put them away nicely) tortilla in a non-stick pan. I sprinkled a small amount to the ingredients on top, folded it in half and dry fried it for a few minutes. After flipping it over (with no problem because I am a star!) I left it for a bit longer until a check assured me that the cheese was melted and gooey. Restart, repeat with additional tortillas, slice into triangles and tuck into yummy, gooey, delicious, cheesy, crunchy, warm, goodness. Mmmmm. I just wish I’d had more left over tortillas.
Possibly not a traditional Quesadilla, but a satisfying, speedy and delicious lunch all the same.
