Sweet Mustard Chicken Bake

The butter component in the recipe is probably going to kill you outright. That said, it was delicious! Super quick to prepare, I didn’t even bother with the basting. It cooked itself while I sat and watched telly, can’t beat that!

Sweet Mustard Chicken Bake
Makes 4 servings

5 boneless, skinless chicken thighs, chopped into bite sized pieces
1/2 cup honey
1/4 cup Dijon mustard (I used seeded, I still haven’t got to the shops to restock on dijon)
1/2 cup butter, melted
1/4 teaspoon freshly ground black pepper

Preheat the oven to 190C. Grease a shallow baking dish.
In a small bowl, stir together the honey, Dijon mustard, melted butter and pepper.
Place chicken in the greased baking dish, and pour the honey mustard sauce over it.
Bake for 45 minutes in the preheated oven, basting frequently with the sauce, until chicken is firm and juices run clear.
